Recipe for Choris(Goa Sausage) Chilly Garlic Noodles

The meal that you see in Frame was my Women's Day 2020 Special – Cashew Fenny infused Cafreal Chicken Crispy Rolls, Choris Chilly Garlic Noodles made with Red Wine and Chocolate Caramel Pudding šŸ™‚ šŸ™‚
My Love for Goan Cooking knows no bounds. And a True Goan loves his/her Sausages Oh so much, Iā€™m sure you know that by nowšŸ˜Š
Since it was Womenā€™s Day, I wanted to work with something that Iā€™ve always wanted to but have always been fearful of giving it a shot as I either never knew the technique of using it or I was simply worried about ruining the dish. Whenever I watch TV shows I find it Oh so stylish when the contestants or Chefs use Alcohol in their cooking. In my case Iā€™ve only enjoyed drinking alcohol, never have I eaten it! Hahaha.. But I find it super stylish and that curious little girl in me always had the keeda to try it someday. So I thought, what better day than Womenā€™s Day to get over my fear, right?
Thought of making something totally whacked yet something that I knew would not ruin my day in the Kitchen! So I came up with this Boozy Spicy Choris Chilly Garlic Noodles and I decided to throw in some of my Home-Made Sweet Raisin Wine that I recently learnt to make, following the recipe shared by a very Talented Home Chef and Baker, named ā€˜Sandra Sarkarā€™ on a Global Goan Food Group that Iā€™m part of. I'm so Thankful to her for the recipe.
The Noodles were bursting with Flavour and the wine added a Sweet hint to the Spicy Garlicy Noodles!
This Woman was EXTREMELY Happy this Womenā€™s Day! Not only because the experiment went down really well, but also because she got over one of her Biggest Cooking fears šŸ˜Š Alcohol ā€¦TickšŸ˜Š

Ingredients

  • 100 grams Fine Noodles(Or any Noodles of your choice)
  • 2 Eggs
  • 30 Beads of Goa Sausages
  • Ā¼ Cup Sweet Raisin Wine(optional)
  • 300 gms Mixed Vegetables(I have used Cabbage, Carrot,Capsicum and French Beans) julienned(cut long)
  • 1 Medium Sized Onions julienned(cut long)
  • 8 Cloves of Garlic chopped fine
  • 1.5 Tspn Chilli Flakes
  • 2 Tspn Salt(for boiling the noodles)
  • 1 Tspn Salt for Tossing the Noodles
  • Ā½ Tspn Pepper Powder
  • 1 Litre Water for Boiling the Noodles
  • 3 Tbspn Oil for Boiling the Noodles

Instructions

  • In a Wok(in which youā€™re going to toss the Noodles), add theGoa Sausages with Ā¼ cup of water and cover the Wok. Place it on low flame and let it boil until the Sausages arefully cooked.
    Note: Do not discard the Sausage oil because that is what we are going to use to toss our Noodles with
  • Ā 
    Once the Sausages turn cool, take the thread and skin off and keep the Sausage Meat aside
  • Simultaneously, we go ahead and boil the noodles. In a large vessel add 1 litre water, 3 tbspn oil and 2 tspn salt and place it on high flame and Once the water begins to boil, add the noodles into it
  • After about 3-5 minutes, give it a stir and check if the noodles are cooked. If they are cooked, strain the noodles using a strainer
  • Once all the water is drained off the noodles, transfer the noodles into a wide plate and keep it aside to cool
    Note: Placing the noodles in a wide plate will allow the noodles to cool faster and prevent it from getting further cooked
  • Now place the Wok(with the Sausage Oil) on medium flame and Once the oil turns Hot, add the chopped Garlic and chilly flakes
  • As soon as the Garlic starts turning light brown, add the Eggs
    Note: If you allow the garlic to turn fully brown, the noodles will taste bitter
  • Now add the Vegetables and increase the flame to High and Toss for 2 minutes
  • Roughly Break it down in the pan, using a wooden spoon or spatula
  • Now add the Noodles, Wine(if using), Salt, Pepper and Sausage Meat and Toss it on High Flame until all the Noodle strings are coated with the Sausage Oil
  • I like my Veggies Nice and crunchy and prefer not overcooking them. But if youā€™re making this for kids, you may want to toss it slightly further until the veggies are cooked. Itā€™s completely upto you though!
