Recipe for Saucy Pops

I was first introduced to these Saucy Chicken Lollipops at our College Canteen in St. Andrew’s, Bandra. I used to wait when that damn bell would ring and I’d run down to the canteen and grab myself two of these most delicious Saucy, Spicy Chicken Lollipops! I remember they were called MASALA LOLLIPOPS! Sooooo Good!
The Saucy Lollipops seemed to have followed me thereafter, wherever I went. When I was doing my Masters at St. Francis too, these used to be my favourite break time snack.
When I came to Dubai, there was no place that matched the College canteen Saucy Lolipops. Once you're able to master flavours and textures, you can try making just about anything at home. I used my Chicken Chilly recipe to try my hand at the Saucy Lollipops with an addition of extra sugar and tomato ketchup and Yayyyy! I’m now eating my Favourite Saucy Pops by the Dozen at Home!

Ingredients

  • 20 Fried Chicken Lolipops(Recipe like given below)
  • 8-10 sprigs of Spring Onions(separate the bulbs and the leaves)- chopped
  • 6-8 Medium sized Garlic Cloves - chopped
  • 2 Tspn chopped Ginger
  • 4-6 Spicy Green Chilly – sliced
  • 2 Tbspn Red Chilly Sauce
  • 1 Tspn Dark Soy Sauce
  • 1 Tbspn(or more) Sugar
  • 1 Tbspn White Vinegar
  • 3 Tbspn Tomato Ketchup
  • ¼ Cup water to be added to the remaining Lolipop batter(Ifyou do not have any lollipop batter left, make a slurry of 1 Tbspn Corn Flourand ½ Cup of water)
  • ½ Tspn Salt(you can add more later if required as the sauces already contain salt)
  • 2 Tbspn Oil

Instructions

  • In a Wok, heat the oil on high flame
    Tip: For any Chinese Food recipe, High Flame is a must for it to get it’s smoky flavour
  • Once the Oil is Hot, add the chopped Garlic, Ginger, Chillies and the chopped bulbs of the Spring Onion and Toss it for about 10 seconds
  • Then add the fried Chicken Lollipops and toss it for about 10 seconds until all the Lollipops are coated with the Ginger, Garlic, Spring Onion and Chillies
  • Now add the Sauces, Sugar, Vinegar and Salt and just a handful of chopped spring onion leaves and mix it all well until all the lollipops are coated with the sauces
  • Now slowly pour the batter mix or the corn flour slury, whichever one you’re using and toss it for about a minute and taste it. If your require any sauce or sugar, add it at this stage. It should taste Spicy and Tangy.
    Notes:
    1)Pour the slurry very slowly. If you pour it in a hurry or pour it all at once, it will clump up
    2)Don’t forget to keep tossing the wok or stirring or else the ingredients will get burnt as the heat is high
  • Finish it off with the remaining chopped spring onion leaves
  • Toss for about 10 seconds and we’re ready to Dig Innnnn!!! If there’s no smoke coming out of your mouth, you haven’t eaten it correctly! Haha!
