In a Wok(in which you’re going to toss the Noodles), add theGoa Sausages with ¼ cup of water and cover the Wok. Place it on low flame and let it boil until the Sausages arefully cooked. Note: Do not discard the Sausage oil because that is what we are going to use to toss our Noodles with Once the Sausages turn cool, take the thread and skin off and keep the Sausage Meat aside Simultaneously, we go ahead and boil the noodles. In a large vessel add 1 litre water, 3 tbspn oil and 2 tspn salt and place it on high flame and Once the water begins to boil, add the noodles into it
After about 3-5 minutes, give it a stir and check if the noodles are cooked. If they are cooked, strain the noodles using a strainer
Once all the water is drained off the noodles, transfer the noodles into a wide plate and keep it aside to coolNote: Placing the noodles in a wide plate will allow the noodles to cool faster and prevent it from getting further cooked Now place the Wok(with the Sausage Oil) on medium flame and Once the oil turns Hot, add the chopped Garlic and chilly flakes
As soon as the Garlic starts turning light brown, add the Eggs Note: If you allow the garlic to turn fully brown, the noodles will taste bitter Now add the Vegetables and increase the flame to High and Toss for 2 minutes
Roughly Break it down in the pan, using a wooden spoon or spatula
Now add the Noodles, Wine(if using), Salt, Pepper and Sausage Meat and Toss it on High Flame until all the Noodle strings are coated with the Sausage Oil
I like my Veggies Nice and crunchy and prefer not overcooking them. But if you’re making this for kids, you may want to toss it slightly further until the veggies are cooked. It’s completely upto you though!
