Recipe for Burnt Chilly Garlic Rice

Ingredients

  • 2 Cups Basmati Rice
  • 450 Gms Boneless chicken (boiled and shredded/cut)
  • 3 Eggs
  • 1/4 Cup Red chilly flakes (alter as per preference)
  • 100 Gms Garlic (chopped fine)
  • 1 Bundle Spring onions (chopped fine)
  • 1 Tspn Soya Sauce
  • 1/2 Tspn Pepper powder
  • Salt (as per taste)
  • 1/2 Tspn Ajinomoto (optional)
  • 3 Tbspn Oil (to add while boiling the rice)
  • 4 Tbspn Oil (to cook the fried rice)
  • 2 Tbspn Salt (to add while boiling the rice)

Instructions

Follow these steps for boiling the rice

  • In a large vessel add water, 3 tbspn oil and 2 tbspn salt and place it on high flame
  • Simultaneously, gently wash the basmati rice until it runs clear and keep aside
  • As soon as the water starts boiling add in the rice and Mark the time
  • Exactly after 6 minutes, turn off the gas flame and strain the rice
    Note: the rice does not have to be fully cooked. It should be cooked about 60% only because while it is cooling, with it’s heat, it further cooks and while tossing, it cooks even further! So, if the rice is fully cooked or over cooked, the fried rice will be very mushy and that’s something nobody really enjoys! 
  • Gently using the back of a fork, separate the rice grains and allow the rice to completely cool at room temperature 
    Note: once the rice is kept for cooling, there should be no contact made with the rice at all
    Once cool, you can gently separate the rice grains using your hand, but very very gently 

Follow these steps to make the Burnt Chilly Rice

  • Firstly, keep all your Ingrediennts ready
    Here I have used left over chicken that I had fried for my chilly chicken but usually I use boiled chicken
  • In a Wok, add 4 tbspn oil and place it on high flame
  • Once the oil becomes hot, add in the garlic and keep tossing
  • As soon as the garlic starts turning brown, add the eggs and gently scramble them
  • Then add in the chilly flakes and keep tossing
  • Then add in the rice, spring onions, chicken, ajinomoto, salt, pepper powder and soya sauce and mix it well but ensure not to press the rice or else it will get smashed
    Note: the size of the Wok will depend on the quantity of rice. If the Wok is small, you will not be able to toss it well and the rice may turn mushy
    If for whatever reason you feel that the rice is sticking to each other, you can sprinkle some oil before tossing
    All this should be done on High flame. Chinese food tastes best when it has a slight burnt flavour to it
    You will not get the same flavour if you make Chinese in a regular vessel. You have to use a Wok!
  • As soon as all the rice grains are coated with the spices and sauces, check  for salt
  • Turn off the flame and transfer the Burnt Chilly Garlic Rice in another vessel so that it doesn’t get any more heat or else the rice will get over cooked and soft
  • Enjoy your Burnt Chilly Garlic Rice when it’s HOT!! 
  • Note:
    You can make burnt chilly garlic rice using Prawns, Mushrooms, squids, Chicken, Beef, whatever you like.
    Tip:- If using Prawns, squids or Mushroom, don’t pre cook it!
