The Perfect Oven Chicken

Well, some matches are made in Heaven
But this one was made in the Oven...
I have always been scared to use the oven to cook food,especially meats, thinking it will take like forever to cook or worse still,may remain raw(more because I have no patience). But as I was watching theIndian #celebritymasterchefthis season, I was super impressed and inspired by Usha Tai (77yrs) that shenever has ever used her Oven for cooking or baking and the Tart that she bakedin the episode was her first ever. I find her so Bold and Inspiring at thethings she does and dreams of doing at this age

Used my usual Chicken fry recipe for this one. In this blog, I’d like to share some tips and techniques what I've used to get this recipe right in the first go especially for all of you who are "Oven Darpoks" like me
P.S. I've named this dish "OVEN CHICKEN" as Iwasn't sure if the Chicken was Grilled, Roasted, Toasted or Baked What'sit called by the way?

Ingredients

  • 4 Whole Chicken Legs withe skin on(marinaded over night)
  • 1 Tbspn Curd/Yogurt
  • Links for various Marinades are shared below. You can use any. I used the "Chicken Fry" recipe
  • 1 Tbspn Melted Butter

For the Oven Veggies

  • 1 Red Capsicum diced
  • 1 Yellow Capsicum diced
  • 1 Green Capsicum diced
  • 1 Orange Capsicum diced
  • 200 gm Snow Peas - snip off the edges
  • 200 gm Mushroom - quartered
  • 2 Large Onions – Cut into 8 cubes each
  • 100 gms Broccoli florets
  • 8 – 10 Garlic cloves - pounded
  • 1 Tbspn Salted Butter
  • 1 Tbspn Chilly Oil - Optional
  • ½ Tspn Vinegar or Lemon Juice(This enhances the freshnessand color of the veggies)
  • 1 Tspn Crushed Pepper
  • 1 Tspn Salt

Instructions

Follow these steps to make the Oven Chicken

  • Pre-heat the Oven at 190 degree celcius for 20 minutes ontop and bottom heating
    Grease a wired rack with Butter or Oil on both sides
    Place the Wired rack onto the middle rack of the oven. Place the Chicken on the rack. Brush some butter on the Chicken. Place a Tray at the bottom row of the oven so that all the juices that drip from the Chicken can be collected in the tray.
    Some gyaan:
    1)    Please do not forget to grease the wrack or else the Chicken will get stuck to it
    2)    I like to use Chicken with the skin on for this recipe as the oil/fats from the skin keeps the chicken nice and moist and the Oven Chicken gets a nice crispy coat from the skin once it’s ready
    3)    I prefer using Butter as that is what gives the Chicken a nice crispy coat
    4)    Placing a tray inside the bottom of the oven is very important or else the oven will get messy with juices that drip from Chicken
  • Let the Chicken get grilled for 30 minutes. Then Flip theChicken to the other side
    Brush some butter on the Chicken and let it get grilled for30minutes on the other side
    It took me exactly 1 hour 10 minutes for the Chicken to getcooked
    If you’re using smaller pieces of Chicken, it will take lesser time

For the Veggies

  • In the same tray that was kept at the bottom in the oven, brush some butter
  • Add all the Veggies along with the Butter, Chilly Oil and other spices in a large Bowl
  • Mix all of this well
    Note: You can add whichever Veggies you like.
  • Transfer all the veggies into the greased tray. Tuck the tray into the Oven and let it get grilled for 45minutes on the middle rack of the oven on top and bottom heating at 190 degrees celsius.
    Note: Since I had a lot of veggies in the tray, it took this long. If the veggies are less, It could take lesser time.
    Note: You will notice a lot of moisture that will get released from all the veggies. You can either use that to brush it over the Chicken or you can keep it to make a Broth or Soup later
  • I Enjoyed this delicious Oven Chicken with the yummy colorful Grilled Veggies and a slice of Toasted Sourdough Bread and some lentil soup.
