Oil Free Spicy Chicken Roast Recipe

This recipe is one of my most favorite creations! It happened by chance and experiment when I was really tired of eating curries. I just wanted to eat plain chicken! This is a quick, easy and healthy recipe for all you busy bees out there!
Being a complete health freak, this happens to be my husband's favorite dish! You can eat it as a side dish/starter or eat it with bread as a main dish as well! 
P.S. You can also use this recipe to make Chicken Liver!!

Ingredients

  • 1 Kg Chicken (cut into small or medium pieces, if you like the skin, you can keep the skin)
  • 6 medium sized Garlic cloves (crushed)
  • 2 slit Spicy Green chillies (you can add more or less as per your taste)
  • 4 Kashmiri chillies (roughly hand broken)
  • 8 Curry leaves
  • 1 tbspn Jeerem Meerem Powder (recipe given below)
  • 1/2 tspn Turmeric powder (haldi)
  • 1/2 tspn Kashmiri chilly powder
  • 2 tbspn Goa vinegar (or any vinegar or your choice)
  • 1 tbspn Ginger Garlic paste (recipe mentioned below)
  • 1 tspn Tomato ketchup (or Honey)
  • 1/2 cup Finely chopped fresh Coriander
  • Salt as per taste

Instructions

  • Wash the chicken thoroughly and place it in a non stick vessel
  • Add all the above mentioned ingredients, except corriander leaves, to the chicken
  • Mix it well
  • Take a fork and poke all the chicken pieces randomly so that the masala enters into the chicken pieces
  • Cover it and let it marinade in the fridge for at least 30 minutes (if you are in a hurry) or 2 hours if you have the time.
  • Remove it from the fridge and mix it well
  • Add 1/4 cup water into the vessel and cover it with a lid
  • Keep it on medium flame to cook
  • After about 10 minutes, There will be a lot of water that will ooze out. Do Not worry!
  • Check if anything like salt, vinegar, masala is required. If required, add it at this stage
  • Turn the gas to high flame, open the lid and let it cook
  • Just as the gravy starts to thicken, add the chopped coriander to the chicken
  • Stir it well and let all the gravy thicken and get mixed with the chicken
  • Turn the gas off once all the gravy has thickened 
  • Oil free Chicken Roast is ready to be served!! πŸ™‚
  • You can deep fry some potato chips/wedges and add it into the chicken too! 
  • Jeerem Meerem recipe:-
    100gms Cumin seeds
    100gms Pepper corns
    50gms Cloves (if its too strong, you can add about 25-30gms)
    50gms Cinnamon (if you don’t like the cinnamon flavor much, add only 30gms)
    **This powder should be stored in an Air Tight container in a dry place
  • Ginger Garlic Paste Recipe:-
    Make a paste of the following:-
    -100 gms Garlic (skinned and roughly chopped)
    -60 gms Ginger (thoroughly washed and roughly chopped. Some people like to remove the skin of the ginger. I don't. However, you can do it the way you are comfortable πŸ™‚
    **After use, this paste should be stored in an Air Tight container in refrigerator
