Recipe for One Pot Mix Fix Bhaji

Since I’m not a very Veg person, that is the last section I look for in my refrigerator. But now since the lockdown I’m making sure every section is properly and equally used so that there is absolutely no wastage(not that there is otherwise either but still…just being more careful)
Now that my Health Freak Bitter Better is doing the groceries these days, my Veggies section is more stocked up than my Cold section. And whether I like it or not, I’m forced to make a veg dish each and every day! Such a Smart Guy na….
But This time I tried playing that Over Smart Cat to finish up the Veggies more quickly, I dished out a Mix of two veggies so that I don’t have to make two separate ones. Hahaha… And trust me It turned out just the way I like it… Quick…One Pot…No Fuss… Yummmmyyyy

Ingredients

  • ½ Kg Snake gourd
  • 2 Bundles of Spinach
  • ½ Cup Roasted Black Gram(skinless)
  • 1 Medium Sized Onion(chopped Fine)
  • ½ Tomato(chopped fine)
  • 3 Green chillies(chopped fine)
  • 4 garlic cloves(crushed in a mortar pestle or cut fine)
  • 1 Tspn Salt
  • 1.5 Tspn Chilly Powder
  • 1 Tspn Turmeric Powder
  • 2 Tspn Oil(optional)
  • 5-6 Curry leaves(optional)
  • 1 Tspn Vinegar(optional)
  • ½ Tspn sugar
  • ¼ Cup Water
  • ½ Cup Fresh grated Coconut(optional)

Instructions

  • Wash the Spinach leaves thoroughly for all the mud to go off and cut about 6-8 leaves together horizontally along with the stem and transfer it into a vessel
  • Now Wash the Snake Gourd thoroughly, cut off the edges and cut them vertically in the centre
  • Take off all the seeds and sponge like substance from the centre
  • Cut the snake gourd horizontally into strips or you can even cut them into small cubes. Transfer this as well into the vessel
  • Now add all the other ingredients mentioned under the ingredients list and mix it well, put a lid on and place it on medium heat to cook
    Note: Spinach releases a lot of water whilst cooking. So be very careful and do not add extra water. While preparing Spinach alone, we do not add any water. But in this recipe since there is whole gram and another vegetable, we are adding water so that it doesn’t dry out
  • Check in between after about 10 minutes you will notice that a lot of water has been released. Take off the lid at this stage and allow the vessel to cook until all the water dries off
  • Once the water dries off the vegetable is ready

Some Tips and Options

  • If you’re ok for it to be a little like a gravy, you can add all this into a Pressure cooker and give it one whistle on medium flame
  • You could also make this with Bottle gourd instead of Snake gourd. If using Bottle gourd, add it after the Spinach begins to boil. Bottle Gourd cooks really fast so if you add it at the start, it will get over cooked.
  • I had Roasted gram in my Pantry. You can use Chickpeas,black eyed beans, green peas or any other pulses of your choice. If you’reusing pulses, ensure they are pre-cooked or else they will remain raw since they take really long to cook.
  • You can also add Potatoes, Carrots, French Beans or anyother Veg.
  •  You Can also add various lentils(dals) to this recipe. If adding Dals, soak it in water for about 30 minutes and then use it. Since veggies cook faster than Dal, soaking the dal will help it cook at the same time with the veggies.
