Recipe for Goan Banana Pancakes – Filos

Sometimes you need to put those over-ripe bananas to good usešŸ˜‹
Filos is a Traditional Goan Banana Pancake enjoyed as a Tea Time Snack in most Goan Homes. Some eat it for breakfast too.
It earns it's distinct flavour from Jaggery and Bananas which makes it different from the usual Pancake
So, how about introducing your Non-Goan friends to our Traditional Filos, at your next Tea Party??

Ingredients

  • 1/2 cup whole wheat flour
  • 70gms palm jaggery(or sugarcane jaggery. If you can't source jaggery you can use round 2 tbspn of Sugar)
  • 1 ripe or over ripe banana(the green ones are more flavourful but you can use whichever you like)
  • 1 Cup room temperature water
  • 1/4 Tspn Salt
  • Oil for Frying

Instructions

  • With the back of a fork, mash the banana in a bowl(please take off the skin of the bananašŸ˜›)
  • Add the wheat flour, salt, jaggery and water into the bowl
  • Whisk Whisk Whisk till all the ingredients come together to form a smooth paste(the batter should not be runny)
  • Simple na??šŸ¤·šŸ¤· Now let's fry the Filos! šŸ¤¤šŸ¤¤
    Just heat two table spoons of oil or ghee on a Non-stick pan (on medium flame)
  • Once the oil is heated, add half a ladle of batter on the pan to form discs(if your pan is wide enough, you can make 3-4 filos at a time) & Cover the pan with a lid
  • After exactly 3 minutes, take off the lid. The Filos will look like this
  • Flip the filos and allow it to cook on the other side for another two minutes(not necessary to put the lid back on)
    Important Note:-
    If you're using an electric heater, you might have to increase the temperature to 'high' but please check what works best for you as different units have different temperature settings!
  • Then transfer the Filos on a kitchen paper napkin to drain off any excess oil and your Filos are ready!
  • Filos are best enjoyed when Hot
  • Note:-
    You can also bake the filos if you dont wish to fry it
    Pre-Heat the Oven at 200Ā°c for 10 minutes(top and botton heating)
    On a baking tray, lay a Parchment paper and lightly grease it with oil
    With the help of a ladle, spread around 8 discs of the batter by pouring it on the parchment paper. Keep around 2 inches gap between each disc.
    Reduce the temperature to 180Ā°c and Tuck the tray into the middle rack of the pre heated oven and allow the Filos to bake for 15-20 minutes or until done.
