Recipe for Beef Roulade/Rolls in Green Masala

The word 'Roulade' means 'Roll' wherein a flattened piece of Meat, Fish or Chicken is wrapped around a stuffing of your choice.
Thanks to the Beautiful tradition of sharing food among neighbours and friends, that I got introduced to the delicious Beef Roulade by my neighbour aunty Olga, who made the best Beef Roulade I've ever tasted till date!
She was this very strict but sweet aunty. And when I requested her for the recipe these were her words in the strictest of tones with her finger pointing at me "You just concentrate on your studies ok, I'll teach your Mumma how to make it" 😅😅 and I ran away from there!
And that's how we were introduced to the concept of Beef Rolls!
Here's my version of the recipe! At home, we call these Beef Rolls.

Ingredients

  • 1/2 Kg Beef cut into thin slices(I got around 8 slices)
  • 4 Long Bacon slices cut in halves(around 100 gms)
  • 1 Potato (cut into wedges)
  • 2 Tspn Ginger Garlic Paste
  • 4 Dried Red Chillies
  • 1 Tbspn Ghee or Oil
  • 1 Tspn Tomato Ketchup or 1/2 Tspn Sugar
  • Salt as per taste (approx 1 tspn)

For the Masala

  • 1/2 Cup Fresh Coriander with stem
  • 1/2 Tspn Garam masala powder
  • 4 Green chillies
  • 6 Cloves of Garlic
  • 1 Green Cardamom
  • 1/2 Tspn Pepper Corns
  • 3 Cloves
  • 1 inch Cinnamon
  • 1/2 Tspn Cumin Seeds
  • 1/2 Tspn Coriander Seeds
  • 1/4 Tspn Chilly Powder
  • 1/2 Tspn Turmeric Powder
  • 1/2 Tomato(optional)
  • 1/2 Onion
  • 1 Tbspn Vinegar Or Lemon Juice
  • 1/4 Cup Water

Instructions

  • Season the Beef Slices with 1/4 tspn Salt, 1/2 tspn Ginger Garlic paste and 1/2 tspn Vinegar or Lemon juice and keep aside
    Note:- Bacon usually contains alot of salt so be careful with the quantity if salt that you add
  • Then, Make a Smooth Fine paste of the Masala by adding water little by little
  • Apply this masala to the beef sices and keep aside for atleast 2 hours or you can keep it overnight if you have time on hand.
    Note:- Marination with Vinegar and Salt helps in reducing the cooking time of the meat. Hence, the longer you marinate, the faster the meat will cook. And for Roulade, it is important to marinate the meat because we use vegetables for the stuffing which usually takes lesser time to cook as compared to meats. So, if the meat is not marinated enough, the veggies will get over cooked in the cooking process.
  • Moving further, we Cut Long strings of thread
    Note:- It should be as long as one of your entire hand
  • Then Take each slice of Beef, Place one slice of Bacon and one Potato wedge on the marinated beef slice
  • Roll the meat from end to end and Tie the roll with the thread
    Note:- Ensure to roll the thread throughout the entire roll of meat and tie it tight enough for the stuffing to remain intact but not so tight where the meat gets cut
  • Place all the Beef Rolls inside a Pressure Cooker. Add all the remaining masala along with 1 cup water and the Ghee or Oil, Ketchup or Sugar and the remaining Ginger Garlic Paste and close the pressure cooker and let it cook until 3-4 whistles are released on medium low flame and turn off the flame
  • Let it rest until all the steam is released from the cooker. Once all the steam is released, open the cooker and check if the meat is cooked and check the gravy for salt
  • Once the meat is cooked, turn on the gas flame to high, keep the cooker open, throw in the whole red chillies and let all the water/gravy boil till it starts to thicken
  • As the gravy is boiling, add some fresh chopped coriander and gently mix it once
  • Once the gravy thickens, turn off the flame and enjoy these beautiful soft and delicious Beef Rolls!
    P.S. Don't forget to take off the thread before eating!
  • Note:- You can also add Carrot, French Beans or any other stuffing of your choice. You can also use Chicken Slices instead of Beef. Incase you're using Chicken, 1 hour of marination is just enough.
