Mango Baathk/Mango Coconut Cake Recipe
Since this is the First recipe on my Blog, I thought of starting off on a Sweet Note 🙂 Coconut cake or Baathk/Batica(as we Goans call it) is one of my favourite cakes and it is relished by all my friends whenever I prepare it! It is a soft and juicy cake which is usually prepared in many Goan homes and relished by most Goans all around the World! It is eaten as a dessert or a tea time snack. On the other hand Mango is my favourite fruit, I can have it in ANY form, Whole or Milkshakes, Ice cream, Kulfi etc. and when the Traditional Indian Alphonso Mangoes arrive in Dubai, I go crazy!So since I love to experiment and play games in my kitchen, I thought why not add some Freshly cut juicy Alphonso Mangoes to my traditional Goan coconut cake/baathk recipe! I'm so glad I experimented this one! It turned out yummm!

Ingredients
- 125 gms Dessicated coconut
- 125 gms Semolina (rawa)
- 150 gms Granulated white sugar
- 70 gms Salted Butter (10 gms for greasing)
- 1 tspn Cardamom powder (green elaichi)
- 1 tspn Vanilla essence
- 1 tspn Baking Powder
- 2 Eggs
- 3 Fully Ripe Alphonso Mangoes (keep 1 Mango for garnishing)
Instructions
- Mix all the above mentioned ingredients in a vessel and soak overnight for about 8hrs (NOT in the refrigerator)
- When baking, preheat the oven for 10mins on 200^c
- Grease the cake container with butter and add the cake mix to it.
- Do not fill it to the brim. Keep atleast 1 inch space for it to rise
- Place it in the oven and bake for 60mins on 180degrees celcius!
- Check the centre with a toothpick or knife and once the toothpick/knife comes out clean, turn off the oven and remove the baathk from the oven and allow it to cool at room temperature
- Cut the baathk either into cubes or slices and garnish each cube/slice with a slice of Freshly cut Alphonso Mango
- You can enjoy it as a dessert or as a tea time snack!Enjoy 🙂
