Snake Gourd Veg without Coconut Recipe

Ingredients

  • 1 Kg Snake Gourd
  • 2 Medium sized Onions (chopped fine)
  • 3 Green chillies (chopped fine)
  • 1 Tspn Turmeric powder
  • 1 Tspn Mustard Seeds
  • 6-8 Curry leaves
  • 1 Tbspn Oil
  • 1/4 Cup Water
  • 1 Tspn Coconut oil or any other cooking oil (for the tadka)

Instructions

  • Slit the Snake gourd vertically into two halves
  • Take off the seeds 
  • Wash the Snake gourd  thoroughly
  • Cut Them into fine strips 
  • Place the cut Snake gourd, chopped onions, chillies, salt, turmeric powder, oil and water into a wide skillet and cover the skillet with a lid
  • Place the skillet on medium flame and let it all boil together 
  • Once it starts to boil turn the gas to high flame and keep tossing and turning the vegetable at intervals and let all the water dry out
  • Once all the water has dried out, turn the flame off
  • In a tadka pan, add 1 tspn coconut oil or any other cooking oil of your choice
  • Place it on medium flame 
  • Once the oil becomes hot, drop in the mustard seeds and Curry leaves
  • Just keep it for 6-8 seconds
    Note:-
    Do not let the Curry leaves turn brown
  • Add this tadka into your Vegetable and give it a gentle mix and cover the vegetable for about 10-15 minutes for the tadka flavour to stay inside the skillet
  • Enjoy this simple yet delicious recipe as a side dish or enjoy it with hot chapatis 😋😋
