Slit the Snake gourd vertically into two halves
Take off the seeds
Wash the Snake gourd thoroughly
Cut Them into fine strips
Place the cut Snake gourd, chopped onions, chillies, salt, turmeric powder, oil and water into a wide skillet and cover the skillet with a lid
Place the skillet on medium flame and let it all boil together
Once it starts to boil turn the gas to high flame and keep tossing and turning the vegetable at intervals and let all the water dry out
Once all the water has dried out, turn the flame off
In a tadka pan, add 1 tspn coconut oil or any other cooking oil of your choice
Place it on medium flame
Once the oil becomes hot, drop in the mustard seeds and Curry leaves
Just keep it for 6-8 secondsNote:-Do not let the Curry leaves turn brown Add this tadka into your Vegetable and give it a gentle mix and cover the vegetable for about 10-15 minutes for the tadka flavour to stay inside the skillet
