Recipe for Onion and Cheese Paratha

Nothing Fancy just a Simple Onion and Cheese Paratha today!
Just woke up this Morning and thought of my Sandwich wala bhaiyya back home and his Super yummy Chilly Cheese Toast Sandwich and thought I’ll make it for breakfast. But unfortunately, I had No bread on me☹So, I decided to try stuffing a Paratha with some similar ingredients, since I had some leftover Chapati dough from last Night!
Turned out Super delish! Approved by the Bitter Better…So Yeah! I decided to add it to my recipe list😊
I just added some Paratha ingredients like Ajwain, Coriander seed powder, Jeera, etc. just to give it that Parathawala touch!
Here’s how I made it. You must give it a shot! Easy Peasy and So Yum!

Ingredients

Ingredients for the outer covering(knead into a Dough)

  • 1 Cup Wheat Flour
  • 1 Tbspn Ghee or Oil
  • ½ Tspn Salt
  • 1/2 Tsp oil
  • ½ Cup Room Temperature Water

Ingredients for the Stuffing(Mix all this in a bowl)

  • 1 Medium sized Onion(chopped fine)
  • ¼ Green Capsicum(chopped fine) – optional but tastes superyumm!
  • 2 Green chillies(chopped fine)
  • 3-4 sprigs of Fresh Coriander(chopped fine)
  • ½ Tspn Salt
  • ½ Tspn Kashmiri Chilly Powder
  • 1/4 Tspn Coriander Powder(Dhania)
  • ¼ Tspn Cumin Seed or ½ Tspn Cumin Seed Powder(Jeera)
  • ¼ Tspn Caraway Seeds(Ajwain)
  • 1 Tspn Chopped Garlic(optional)

Other Ingredinets

  • 1/4 Cup Dry Wheat Flour
  • 2 Tbspn Ghee
  • 2 Slices of Cheese or ½ Cup Grated Cheddar Cheese

Instructions

Follow these steps to make the Dough

  • In a bowl add all the ingredients. DO NOT add water and the additional 1/2 tsp oil
  • Then add the water little by little and bring it all together to form a dough
  • Once the dough is formed, massage it for 5 minutes adding 1/2 tspn Oil, cover it and keep aside to rest

Simultaneously make the Stuffing

  • In a bowl Mix all the ingredients mentioned under the 'stuffing' section

Follow these steps to make the Parathas

  • Make Medium sized balls of the dough(slightly bigger than that of a Chapati)
  • Roll each ball it into a thick disc
    Note:Here we do not have to roll it completely. Just may be quarter of the size of a full Chapati
    Important tip: the disc has to be thick. If you roll it thin, the stuffing will come out of the pocket while rolling the Paratha
  • Now add 1.5 tbspn of the stuffing in the centre of the disc and add the cheese as well
    Note: Once you roll out the Paratha, the cheese will spread all across the Paratha and when you fry it it will melt
  • Bring all the edges of the disc together in the centre
  • I've used Slice cheese and cut it into fine squares. I used 1 slice for 2 Parathas. You can use 1 slice for one Paratha if you like it more Cheesy. If you're adding more Cheese, reduce the quantity of salt accordingly
  • Wrap and seal it like a pouch
  • Roll each Pouch in some dry wheat flour and place it on a lightly floured surface, sealed side up
  • Now, very gently, hold the ends of the rolling pin with both hands and flatten the pouch(by tapping it all across)into a thick disc
    Note: Do not put too much pressure while tapping the pouches with the rolling pin. Ensure the pouch is covered with flour or else it will stick to the rolling pin and it will be difficult for you to continue rolling
  • Now, with the rolling pin, gently roll out the disc flat, around 7-8 inches in diameter with 1 inch thickness
    Note:-Do Not be in a hurry to roll the Paratha. Also, do not put too much pressure on the rolling pin, while rolling out the Paratha or else all the stuffing will start oozing out
    Roll the Paratha on the Sealed side
  • Heat a pan on medium flame
  • Once it turns hot, transfer one Paratha on the Pan
    Note:-Do Not be in a hurry. Wait until the pan turns hot because only then will the parathas puff up
  • When you see bubbles forming on the other side, flip the paratha and brush some ghee, oil or butter across the Paratha
  • Flip it again on the other side and lightly brush with ghee, oil or butter. You will notice it puffing up
    Note:- ensure not to leave it unattended or else it will get burnt. I'd suggest you roll out all the parathas first and then only concentrate on frying them. Or if you have help, get someone to fry, while you roll them.
  • Once done, transfer the parathas into a Hot case or a plate and Enjoy these Hot Cheesy Parathas straight from the Pan nice and Hot! You can eat these with either Green chutney, Pickles, Curds or Melted Butter! Yummmm!
