Recipe for Sweet Corn Salad
Roasted Sweet Corn Cob or in Mumbai as we call it “Butta” with some salt and Red chilly powder and a squeeze of Lemon is a Monsoon favorite for most Mumbaikars. Another favourite is Hot boiled Sweet Corn with Butter and Lemon….ooohhhh sooo delish!I’m a huge fan of Sweet Corn in any preparation, be it soup, salad, plain boiled or roasted or in a cutlet, I’m a die hard corn girl!Whenever, we don’t feel like a carb especially at night, we pan grill either fish or chicken and make a nice chatpata corn salad on the side to go with it. Here’s my easy peasy recipe.(Instead of Corn, you can use any pulses or millets of your choice too. Chickpeas, Kidney Bean, Black Eyed Peas or even Qinoa or Barley)
Ingredients
- 2 Corn Cobs(approx. 350 gms)
- ½ Cup water(for boiling the corn)
- 1 Tspn Salt(for boiling the corn)
- 1 Cucumber - chopped fine
- 1 Onion - chopped fine
- 1 Tomato - chopped fine
- 1 Green Chilly - chopped fine
- 2-3 sprigs of fresh Corianderwith stem - chopped fine
- ½ Tspn Crushed Black Pepper
- ½ Tspn Chaat Masala(This is what elevates the Salad to another level)
- ½ Tspn Sugar
- ½ Tspn Salt
- 1.5 Tspn Vinegar or Lemon Juice
Instructions
- Wash the Corn cobs thoroughly and break them into two. In a vessel, add the corn cobs, water and salt. Cover the vessel and let it boil
- Once the Corn kernels begin to look darker yellow in color, turn off the heat drain off the water and keep it to coolNote: You can use this water for kneading your chapati dough or even use it in your cooking
- Once the Corn has come down to room temperature, place the corn cob vertically on the chopping board and with the help of a sharp knife, cut the corn kernels on all the sides off the cob
- The corn cob should look like this.
- In a bowl, add all the ingredients along with the corn. Give it a nice mix and you Chatpata Corn Salad is ready!
- If you like you can also make the following dressing tooIn a jar add the following, put the lid on and give it a rigorous shake. You can use this dressing for your corn salad if you like a creamy salad(Learnt the jar trick from Chef Jamie Oliver on Instagram) 1 Tbspn Yougurt, 1 Tspn Olive Oil, 1 Tspn Sugar, ½ Tspn Salt, Some crushed pepper, 1 clove of garlic chopped fine,1 Green chilly chopped fine, 1.5 Tspn Vinegar or lemon juice, some chopped mint leaves, some chopped coriander.Enjoyyyyy!!
