Recipe for Chicken Heart Chilly Fry
Recipe for Chicken Heart Chilly Fry
‘Kalliz gupp gupp zhata’ was something my Nana always said whenever she'd be scared! If she saw me cooking so many hearts, I’m damn sure she’d use her famous line even today! Dedicating this post to Nana in Heaven on her 22nd Death Anniversary! May she Rest in Peace. So, Chicken hearts (and all spares) have been my childhood favourite. In India, we get the whole chicken with all the spares in the pack and when Mum would make Chicken curry, I’d say an extra prayer for nobody else to find the spares in the curry. I’d claim all the spares, including the Neck and Wings in my name😊Looking around people not really fancying chicken spares, I’d always say, when I get married I won’t need to fight for the spares, I’ll eat them all by myself. But who knew I’d fall in Love with someone who loves spares much more than I do! DAMMIT!The joke of all ages was when we got married and moved to Dubai. Guess what!!! The Chicken packets had NO SPARES. Say Whattttttttt!!!!Cheater Cocks(or Hens) !!!Spares here are sold in individual packets of 500 grams each(Liver and Gizzards only) But we were turning ‘Heartless’ This time at the Supermarket for the first time I spotted a pack of Chicken Hearts on the shelf. I didn’t wait a minute more and grabbed it not knowing what I would make but I just grabbed it. My mind was telling me to put it all in a curry so Floyd so I could make up for all the years of not finding ‘SPARES’ in our Chicken packets but then I decided to just make a quick chilly fry to have it with Pao!P.S. Clicking the cover photo for this recipe has by far been the hardest. I just kept plucking and eating the hearts from the top of the plate and replacing them! Hahahahaha I cannot stop laughing at my Glutty self!P.P.S. I named this dish 'Kalliz Boom Bang-A-Bang' because anything related to the heart, you'll find my Mum singing this song 🙂
Servings 4 servings
Ingredients
- 500 gms Chicken Hearts
- 4 Medium sized Onions(sliced)
- 1 large Tomato(sliced)
- 6-8 Spicy Green chillies(slit)
- 1 small green Capsicum(sliced)
- 1 Tspn Ginger Garlic paste
- ½ tspn Kashmiri chilli powder
- ½ tspn Turmeric powder
- 1.5 tsp Vinegar(if you have Goan palm vinegar even better)
- ½ tspn Sugar or 1 tspn Ketchup
- ½ tspn Salt
- A handful of Fresh Coriander(finely chopped with the stem)
- 1 tbpn cooking oil
For the Marinade
- ½ tsp salt
- ½ tsp ginger garlic paste
Instructions
- Wash and Marinade the chicken hearts with salt and ginger garlic paste for about 30 minutes at room temperature
- In a pan heat the oil and add the Onions and slit chillies and le it cook for about 1 minuteNote: Do not put the lid on the Pan and do not reduce the heat or else the onions will turn soft. And let it stir fry for just a minute. The onions should be nice and crunchy(However, if I was making this for my Mom,I would cook the onions some more or I’d here her complaint ‘kande neebor haa’the onions are raw 🙂 🙂
- Now add the Tomatoes, salt, chilly powder and turmeric powder and give it a mix. Let the pan still be open. Keep stirring or tossing. The salt allows the Onion and Tomato to release water so do not be afraid of itgetting burntNote: I have added A Tspn of Smoked Paprika to give it a Goa Sausage smokey effect but you can totally skip it. Also, if you have a green capsicum on hand, slice up about half a capsicum and it to the chilly fry. It taste super yummm!
- After about 1 minute, reduce the heat a little and add the Chicken hearts, vinegar and sugar. Mix it well and now you can put a lid on the pan. Let this cook until the hearts turn hard(it’s absolutely ok for these hearts to turn hard, ensure your Heart is intact and as Soft and Beautiful as that of a Child 😊
- Take off the lid, taste taste taste. I like my chilly fry spicy and tangy , if anything is required, add it nowThrow in the chopped coriander and see how the fate of the hearts change…..ooooh la la next level!!!
- You have an option to either allow it to boil until the gravy dries out or you can turn off the heat at this point, get that Pav and dig in!!! Enjoy!
