Recipe for Mommy-in-Law's French Bean Bhaji

If you know me well, you’ll know that I’m not such a fan of veggies. I mean, if you give it to me I will most definitely eat it but if I have to make it, I’m not too happy to make it. But this is one recipe which I absolutely enjoy. Not only because it has minimum ingredients but because it has no fuss recipe yet so full of flavour with lots of my favourite Garlic.
This is my Mommy-in-law’s speciality bhaji and I remember eating it when I first came came to Dubai, she had made it. Before this, the only kind of veggies I had ever eaten were fugaths, just plain with coconut and no spices at all. I went insane Happy eating this version of French Beans with Kaboos for dinner. It was super Yum! It’s obvious that I took the recipe from Mom and was shocked to know that it calls for just 5 main ingredients.
Do give it a try. You will love it for sure. If a carnivore like me enjoys it so much, I’m sure you’re going to love it too!

Ingredients

  • 500 gms French Beans(Green Beans)
  • 1 Onion chopped fine
  • 6-8 Garlic cloves chopped fine
  • 2 Green Chillies – chopped fine
  • ½ Tspn Turmeric Powder
  • 2 Tbspn Oil
  • 1.5 Tspn Salt(Or as per taste)

Instructions

  • Take off the ends of the French beans
  • Cut the French beans either round or in slants and transfer it into a wide bowl. My Mom in law cuts in round and she cuts it so fine. Patience to another level. It took me 1 hour to cut it so fine but then I wanted to do it exactly the way she does
  • Put some water into the bowl and wash the French Beans and then Drain the water and keep the French beans aside
  • In a skillet, heat some oil on medium heat
  • Once the Oil turns Hot, add the Onions, Chillies and Garlica nd Saute until the Onion turn light brown
  • Then transfer the French beans, Turmeric and Salt and give it a mix
  • Put the lid on and add about ½ a cup of water over the lid
Note: So this is what my Mommy in law does. She put some water over the lid. When the Water on the lid is fully evaporated it means the veggie is done. This acts as a timer of sorts to tell when the veg is ready. More like a warning NOT to keep opening it to check every time. The veg cooks in it’s own Moisture
Just ensure the heat is not high or else by the time you take off the lid, you’re going to have a burnt base veg! hahaha
  • Once the water is evaporated, take off the lid and check that the veg is ready. It will be nice and crunchy as we haven’t used any water in this recipe
  • Turn off the heat and Enjoy this super delicious French bean bhaji the Mommy in law way with steaming Hot chaps! So good! Yummmm
