At Home, we can eat Pork each and every day, especially my Dad! He just LOVES Pork! When we think of Pork the First thing that comes to our mind is a Nice Red Fiery Pork Sorpotel or Vindalho and the next best thing is a Pork Chilly Fry or Roast and the likes.
But this particular preparation takes me down Memory lane. When I had my Eatery, we had some real fun and awesome customers who became our friends and Yup! We’re still in touch with so many of them. So, among all of them there is this one couple CHERYL & DARRYL. Out of which, Darryl is this super hilarious guy and whenever he came to the outlet he would make us laugh with his one liners and crazy fun talks. ‘Baby’ is lovingly what they would call me and still do😊 So, one day Darryl said “Don’t you make Green Pork Curry??? Make Mennn. I used to eat when I was small” And Pattt came a loud laugh from me telling him “Why only Green, How about Yellow???” hahaha! Knowing him, I thought he was kidding and he kept saying “I am serious Baby, Please make it you will Thank Me” and just to be sure he wasn’t kidding, he ordered 1kgof Pork Green Curry and said I so badly want you to try it out plus I’m craving it. And I was so nervous because I hadn’t made it before and He said “I’m confident you will do a good Job” And I was glad that I was able to take him down a Nostalgic trip and he could fulfil his craving of his favourite Pork Green Curry😊
So, that’s how I was introduced to this Super Delicious Deal of Pork in Green Curry, something I would never have even thought of, leave alone making it!  
I can never stop thinking about my Chrizzo’s Eatery days, all the Beautiful Memories attached to it and all my Beautiful Regular and Loyal Customers who have turned into close friends now😊
So here’s what I made for Darryl.

Ingredients

For the Curry

  • 1Kg Boneless Pork Belly cut into small cubes(you can use Pork with Bone too, if you like)
  • 1 Cup Water( for boiling the Pork)
  • 2 Cups Water(for the Curry)
  • ½ Cup Coconut Milk(optional)
  • 1 Small Onion(sliced)
  • 4-6 Curry Leaves
  • 3-4 Green Chilly slit into two (You can add more if you like it spicy)
  • 1/2 Tsp Salt
  • 2 Tsp Ginger Garlic Paste (1Tspn for Boiling the Pork)
  • 1 Tbsp Pure Cow's Ghee(Not Dalda)
  • 1 Tbspn Oil
  • ½ Tspn Bouillon Cube
  • 2 Green Cardamom
  • 4-5 Pepper Corns
  • 2 Cloves
  • 1" Cinnamon stick
  • A small piece of Star Anise (approx a quarter of it)
  • 3 Bayleaves

For the Masala

  • 100 gms FreshCoriander with stem
  • 6 Tbsp FreshGrated Coconut(if you’re using Coconut Milk, reduce the Coconut quantityto 4 Tbspn)
  • 1 Tsp Peppercorns
  • 1 Tsp Cuminseeds
  • 1 Tsp Corianderseeds
  • 2 Green Cardamom
  • 4 Cloves
  • 2” Cinnamon
  • 1 small ball sized Tamarind flesh(you canadd some Vinegar to the curry if you like it more tangy)
  • 4 GreenChillies
  • 10 Garlic cloves(roughly chopped)
  • 1 Tsp TurmericPowder
  • 1/2 SmallOnion(roughly chopped)
  • 1 Tsp Sugar
  • 1 Cup Water

Instructions

  • In a Pressure cooker, Transfer the Pork cubes, wash it twice and drain off the water, Then add 1 Cup of water. 1 Tspn Salt and 1 Tspn Ginger Garlic Paste, mix it well, put the lid on and allow the Pork to boil until 2 whistles are released or until the Pork is cooked. Keep it aside. Do not discard the water

Follow these steps to make the Masala

  • Transfer all the ingredients (except water) mentioned under the masala section, into a mixer grinder
    Note: If you’re using a small mixer jar, make the masala in two batches

  • Add water little by little and Grind all the ingredients until it turns into a smooth fine paste, and keep it aside
    Note:- Add water little at a time. If you add all the water at once, the ingredients wont break down well and the masala will remain grainy.

Follow these steps to make the curry

  • In a vessel, heat the Oil and Ghee on medium heat and add the dry whole spices i.e 2 Green Cardamom, 2Cloves, 1 inch Cinnamon, 3-4 Pepper corns and 1/4 Star Anise
  • Once the Spices start releasing its aroma, add in the Slit Chillies, Onions, Bay Leaves and Curry Leaves mix it well, and let it sauté on medium low flame. Cover the vessel
  • Once the onions start turning translucent, add in the ginger garlic paste and mix it well
  • Once the raw smell of the ginger garlic paste reduces, add the masala paste and give it a stir
    Add 1cup of that water to the curry, increase the flame to medium and let the curry cook with the lid on
    Add in the Bouillon cube if using
  • Add 1cup water into the mixer in which the masala was ground. Give it a nice mix and add the water to the curry
  • After about 20 minutes or so, add the Boiled Pork with the Stock. Give it a stir and cover the vessel
    Note: The Curry needs to boil and cook well until the bitterness of the spices can no longer be tasted.
    Before adding in the Pork, taste the curry and check if you require more tanginess, salt, etc. and add it at this stage because once the pork goes in, we don’t cook it for too long or else it may shred.
  • Once the Curry begins to Boil, pour in the Coconut Milk, if using
    Note: Once the Coconut Milk is added, turn the heat high and continue stirring the curry at regular intervals so that the Coconut milk doesn't split
  • Let the curry boil for about 10 minutes and turn off the heat. You can add more water here if you like a thinner curry
  • Enjoy this yummy deal of Pork Green Curry
    It goes well with plain white Rice, Pulao, Bread or Poiee. Yummmm!
