Caramel Bread Pudding Recipe

Caramel Bread Pudding is a tea time snack that I've been enjoying ever since I was little kid.
As a kid, I remember, during holidays, whenever my Mum made sandwiches for us, I used to be her little helper to cut the sides of the bread and she would always say "cut it neatly and don't discard the sides ok".  After lunch, we kids would sleep for a while and as soon as we woke up, there used to be a Big bowl of Caramel Bread Pudding, placed on the table waiting for us to savor for evening tea!
As I was growing up, I then realised why my Mum used to tell me "Not to discard the sides of the slices" So cool, I thought....No wastage whatsoever!!

Ingredients

  • 4 White Slice Bread (Or Sides of 10 slice bread)
  • 3 Eggs (If Big eggs, you can use 2)
  • 1/2 litre Full Fat Milk
  • 6 tbspn White Granulated Sugar (keep aside 1 for caramelising)
  • 1/4 tspn Green Caramom powder
  • 1/4 cup Assorted cut dry fruits (roughly chopped)

Instructions

  • Boil the milk with the powdered cardamom and 5 tbspns sugar and keep it aside to cool
  • Once completely cooled, add the dry fruits(if using), eggs and bread slices to the milk and gently mix it until the bread is completely dissolved and blended with the milk to form a slightly thick mixture. We'll name this (M1)
    Note:- Beat the eggs with a whisk, separately in a bowl and then add the beaten eggs to the milk and bread mixture
  • In another vessel, caramelise 1tbspn sugar and let it cool. We name this (M2)
    Note:- For caramelising, take a steel or aluminium vessel and add 1 tbspn sugar in it. Place it on medium high flame. Take a cloth/vessel holder and hold the vessel and keep rotating it on the flame. Once the sugar starts to melt., keep rotating the vessel, for two main reasons :-
    a)The caramel has to spread throughout the vessel
    b)If the vessel is not rotated, the sugar will get burnt.
  • Once (M2) has cooled completely, add (M1) into (M2) and cover it with a lid. We'll name this entire thing (M3)
  • (M3) has to fit into a bigger vessel for the purpose of double boiling
    Note:- Double boiling is a method wherein An ingredient is placed in a vessel and that vessel with the ingredient in it is placed into another big vessel which has water in it. The main purpose of Double boiling is that there are certain dishes that require only steam for them to get cooked and not direct heat from the gas flame. 
    Bread Pudding is one of them
  • So take a big vessel(Double the size or much bigger than that of M3) and add 4 cups of water to it.
  • Place (M3) along with the vessel into this big vessel with water and cover the big vessel. 
  • Place it on fast flame for the first 10 minutes.
  • Reduce the flame to low, for the next 30 minutes. 
  • After that, turn the gas off and immediately remove the (M3) vessel from the big vessel or else it may turn hard with the heat/steam, if left inside
  • Let it cool completely at room temperature
  • Once cooled, take a knife and run it through the outer sides of the entire Bread Pudding in a circular motion so that it is released from the sides of the vessel
  • Turn it upside down on a Plate or a wide bowl, so that the caramelised surface is on top(This step is optional. It is done for presentation purpose. There are times, where we are so excited to eat the Bread Pudding, that we skip this step...hahahaha!)
  • It can be served and eaten hot or cold(refrigerated) as per your preference
  • If you prefer eating it cold, place the Bread Pudding in the refrigerator for 2-3 hours or until chilled. (DO NOT forget to cover it with either cling wrap or a lid while placing it in the refrigerator or else the outer layer will turn hard)
  • .Note:-
    * If you don't want to follow the double boiling method, You can also bake it in the oven. Pre-heat the oven on 250^c for 10 minutes. Place the Bread pudding mixture inside the oven. Bake it at 200^c for the first 10 mins and 180^c for the next 30 minutes.
    *If baking, you will have to caramelise the sugar in an aluminium baking tray or a cake container(this will have to be done on a gas flame). Pour the Milk, Eggs and Bread mixture into the caramelised container and place this directly into the oven. Before placing it in the oven, cover it with an aluminium foil sheet
    *In this bread pudding, i have not added any dry fruits
