Poha/Fov/Flattened Rice Recipe
Poha is the local Indian name for Flattened Rice. It is also known as "Fov" in Konkani.Poha is a very delicious and extremely healthy breakfast or tea time snack. From the healthy lot, this happens to be my favourite breakfast/tea time snack! It not only excites my taste buds, but also keeps me fuller for a longer period of time πMy love for Poha goes way back to my childhood days wherein all the children of my area would go to a Garden in South Mumbai to play during evening time and before leaving for home after winding up, our parents used to treat us at a humble 'garden canteen' also knows as "Zhunka Baakar" runned by women. All of us as kids used to wait for our turn to enjoy our evening snacks after play. I dedicate this post to all my childhood friends who enjoyed eating at "Japanese Garden" Sharing with you all, my version of Poha/Fov/Flattened Rice.Hope You Enjoy It π

Ingredients
- 2 cups Poha/Fov/Flattened Rice (You get two varities. Thin and Thick. I use thick poha. Also, you get Brown poha and White poha. I use White poha but you can use Brown poha too)
- 2 Medium sized Onions (chopped fine)
- 1 Medium sized tomato (chopped fine - optional)
- 1 Medium sized Potato (diced into 1 inch pieces)
- 2 Spicy Green chillies (chopped fine. you can alter the no. of chillies as per your taste)
- 1 tspn Cumin seeds (optional)
- 1 tspn Mustard Seeds
- 8-10 Curry Leaves
- 1 handfull Roasted Peanuts
- 1/2 tspn White sugar
- 1/2 tspn Salt (or as per taste)
- 1/4 tspn Turmeric Powder
- 2 tbspn Oil
- 1 Medium sized lemon
- 1/4 cup Fresh Coriander (chopped fine)
Instructions
- Boil the potatoes till soft and keep aside(I boil them in a cooker giving it one whistle on medium flame)
- Immediately after keeping all the ingredients ready, Wash the Poha in a big fine strainer till all the water runs clear and let it stay in the strainer
- In a Kadai, heat the oil on medium flame.
- Once the oil is hot, add the mustard seeds and cumin seeds(if using) and let it crackle.
- As the mustard starts to crackle, add the the curry leaves and let it cook for 1 minute
- Then add the onions,tomatoes(if using) and green chillies and stir it well
- Cover it with a lid and let it cook until the onions cook well
- Add the roasted peanuts, turmeric powder, boiled potatoes, sugar, salt, juice of half the lemon and give it a quick stir
- Then add the Poha and coriander leaves and gently mix it with a flat spatula or spoon until all the rice flakes are covered in turmeric powder and turn yellow. (If you think the poha is too light in colour, you can add more turmeric powder)Note:-Don't be in a hurry to rigorously stir the poha or else the flakes may break down and the poha may turn sticky(unless you like sticky poha. Well, some do like it sticky π )
- Taste and check if you require more salt, sugar or lemon juice. If you do, then add it at this stage
- Garnish with fresh Coriander and Roasted peanuts and enjoy a bowl of Hot Poha/Fova/Flattened Rice with a nice Hot cup of Tea π
