500GmsCluster Beans(either hand broken or Cut into 1 inch sized pieces)
1LargePotato(cut into cubes)
2Medium sizedOnions(chopped fine)
1Medium sizedTomato(chopped fine)
2GreenChillies(chopped fine)
1/2TspnTurmeric Powder
1/2TspnChilly Powder
4-5Curry leaves
1TspnVinegar
1/2TspnSugar(optional)
Salt(as per taste)
3-4SprigsFresh Coriander(chopped fine)
1/4CupWater
1TspnOil
Instructions
In a vessel, add all the ingredients mentioned above(except fresh coriander) , mix it well, cover the vessel with a lid and place it on medium flame
After about 10 minutes, open and check that the water hasn't dried off. Give it a mix and cover the vessel. Of the water has dried off, add a tbspn of water
Allow this to cook until the potatoes are fully cooked
Once the potatoes are fully cooked, add the fresh coriander and mix it well
Turn the flame to high and allow the water to dry out completely
Once the water dries out, turn off the gas flame and enjoy your Bhaji nice and hot either with some Hot Chapatis or as a side dish to a wholesome meal!
