Make Medium sized balls of the dough(slightly bigger than that of a Chapati)
Roll each ball it into a thick discNote:Here we do not have to roll it completely. Just may be quarter of the size of a full ChapatiImportant tip: the disc has to be thick. If you roll it thin, the stuffing will come out of the pocket while rolling the Paratha Now add 1.5 tbspn of the stuffing in the centre of the disc and add the cheese as wellNote: Once you roll out the Paratha, the cheese will spread all across the Paratha and when you fry it it will melt Bring all the edges of the disc together in the centre
I've used Slice cheese and cut it into fine squares. I used 1 slice for 2 Parathas. You can use 1 slice for one Paratha if you like it more Cheesy. If you're adding more Cheese, reduce the quantity of salt accordingly
Wrap and seal it like a pouch
Roll each Pouch in some dry wheat flour and place it on a lightly floured surface, sealed side up
Now, very gently, hold the ends of the rolling pin with both hands and flatten the pouch(by tapping it all across)into a thick disc Note: Do not put too much pressure while tapping the pouches with the rolling pin. Ensure the pouch is covered with flour or else it will stick to the rolling pin and it will be difficult for you to continue rolling Now, with the rolling pin, gently roll out the disc flat, around 7-8 inches in diameter with 1 inch thicknessNote:-Do Not be in a hurry to roll the Paratha. Also, do not put too much pressure on the rolling pin, while rolling out the Paratha or else all the stuffing will start oozing outRoll the Paratha on the Sealed side Heat a pan on medium flame
Once it turns hot, transfer one Paratha on the PanNote:-Do Not be in a hurry. Wait until the pan turns hot because only then will the parathas puff up When you see bubbles forming on the other side, flip the paratha and brush some ghee, oil or butter across the Paratha
Flip it again on the other side and lightly brush with ghee, oil or butter. You will notice it puffing upNote:- ensure not to leave it unattended or else it will get burnt. I'd suggest you roll out all the parathas first and then only concentrate on frying them. Or if you have help, get someone to fry, while you roll them. Once done, transfer the parathas into a Hot case or a plate and Enjoy these Hot Cheesy Parathas straight from the Pan nice and Hot! You can eat these with either Green chutney, Pickles, Curds or Melted Butter! Yummmm!
