In a vessel/bowl, mix the sugar powder and eggs
Beat them with a hand beater till all the sugar dissolves and the mixture turns a bit fluffy - Mixture A
In another bowl add the all purpose flour - maida, cardamom powder and nutmeg powder to the coconut milk and mix well with a hand beater so that no lumps are formed - Mixture B
Mix both the mixtures(Mixture A & Mixture B) together & Stir it well (We call this Mixture C)
Strain this entire mixture(Mixture C) in another big vessel and keep aside
In a small vessel, add the 30gms full sugar and place it on medium high heat to prepare the caramel
Once the caramel turns dark brown, turn the gas off and add about 1/4cup water to it and let it cool(while adding the water, it may splutter, just be careful)
Add half of the bebinca mix(Mixture C) to the caramel mix and stir it well. It will turn Dark Brown (We call this dark brown mixture, Mixture D)
So now u have 2 mixtures, i.e dark brown(Mixture D) and light brown(Mixture C)
If you like, You can add colors of your choice to the light colored mix(Mixture C) by first placing the mix in different/separate bowls and then adding the colors of your choice individually to them(Optional)
Now turn on your oven and pre heat it for 10 minutes at 200^c
In a baking container, add 1 tbspn ghee and once the oven has heated up, place the container inside for about 2-3 minutes until all the ghee melts and covers the entire bottom of the container.
Add the 1st layer(dark mix, Mixture D) using 1 ladle full of the mixture(if your container is wider, add 2 ladles)
Place it in the oven and let it cook for about 15 minutes
Remove the container from the oven, brush some ghee on the cooked layer with a silicon brush and add 1 ladle(or 2 ladles if using a wider container) of the 2nd layer(light or colored mix Mixture C). Place the container in the oven and let it bake for 20 minutes(*Here i followed a technique that I recently learned, of keeping the oven door slightly open while baking, so that the end results are superb. It gives an amazing glaze on to the bebinca)
Similarly, You have to bake alternate layers
Follow the same procedure for each layer until all your mixture is over
Once done, keep it out to cool naturally. cut them into vertical slices and serve.
Some like it Hot while the others like it Cold! Either way, it tastes delicious!

Please keep checking that the layers are getting cooked well or else you will have to adjust the timing accordingly-If serving it cold, place it in the refrigerator for at least 6 hrs, after it has naturally cooled.
